1 tablespoon fresh lime juice
1 medium mango, peeled and diced
1 fresh jalapeno pepper, seeded and thinly sliced
2 tablespoons unsalted, dry roasted peanuts (optional)
Directions
Pre-heat your grill to medium-high heat. Season the steak with salt and black pepper. Spray the hot grill rack with cooking oil. Grill the steak on each side for 4-6 minutes, or until it’s done to your liking (for pork, aim for an internal temperature of 165 degrees F). When it’s done, transfer to a plate and let stand for 5 minutes. Cut diagonally across the grain into thin slices.
Put the cilantro, lime juice, mango, and jalapeno in a bowl. Toss to combine. Sprinkle with peanuts.
Serve the sliced steak with salsa on the side.
