Minty Watermelon Summer Salad Recipe

Watermelon. Check. Arugula. Check. Mint. Check. Whip up this mouthwatering salad packed with all your favorite summer flavors in just minutes.
Ingredients
- 1/2 small red onion, sliced thinly and halved (about 1/4 cup)
- 2 tablespoons fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 6 Kalamata olives, pitted and chopped
- 1 1/2 cups ripe seedless watermelon, cut into thin triangles
- 1 1/2 cups loosely packed arugula
- 1/4 cup loosely packed chopped fresh mint
- 1/3 cup crumbled pasteurized feta cheese
Directions
In a serving bowl combine the onion, lime juice, olive oil and olives and mix. Let stand for 15 minutes.
Add the watermelon, arugula, mint and feta. Toss and serve.
